How to dress a salad for two:
Our simplest dressing advice is to add equal parts of Olive Oil and Balsamic Vinegar to the salad. Do you need to whisk and emulsify before adding over the salad ingredients? No, but if you are making enough salad dressing for a week or adding other ingredients, like dijon mustard, you might want to do this on the side. Add 1 Tbsp Olive Oil + Balsamic Vinegar to a large bowl. Add any dijon mustard, salt, pepper, spices. Whisk then taste. Add your salad greens to bowl, toss well to coat. Plate the greens and add your toppings (i.e. fruit, seeds, nuts, cheeses, croutons, etc). Drizzle a little balsamic over the top! Adjust quantity and ratio as you go. Enjoy!
